Did you know? Avocados are always picked green. They need 2-3 days to ripen. Best place is next to bananas at room temperature. The way to check if they are ripe is near the top of the fruit, where they connect to the tree. When gently pressed this area will feel soft if the fruit is ripe. Then the fruit can be placed in the fridge for 2-3 days before use.
When making a puree or guacamole with ripe avocadoes, to ensure the fruit doesn’t oxidate (discolour) leave the seed (stone) of the avocado in the mixture. Your mixture can then also be frozen.
There is a new variety of avocado called ‘Surprise’ which you can eat the skin of!
